Quinoa “Mac” & Cheese


  • Butter
  • 2 cloves garlic, minced
  • 1 ½ cups uncooked quinoa, rinsed and drained
  • Water or stock (per quinoa directions)
  • Veggies of your choice (Optional)
  • 2 large eggs
  • 1 cup milk
  • 1 ½ cups grated cheddar cheese
  • Panko or bread crumbs mixed with olive oil.
  • Optional Toppings: Hot Sauce, Sour Cream, Scallions, Crushed Red Peppers


Preheat oven to 350F.  Coat 13x9 inch dish (or 8 individual ramekins) with cooking spray.

Melt butter in pot, then add garlic and cook a few minutes.  Add uncooked quinoa and toast to golden brown.  Add water or stock and cook according to quinoa package directions.

Cook any veggies you would like in this dish. 

Whisk together eggs and milk in large bowl. Fold in cooked quinoa, veggies, and cheese. Stir very well and let some of the cheese melt.  

Transfer to prepared baking dish.  If using Panko or bread crumbs add now and bake 30-35 minutes, until bread crumbs are browned.
