Bulgur with Apricots & Garbanzo Beans

Curry and garbanzo beans is one of my favorite flavor combinations. The bulgur and beans in this dish form a complete protein, making it a hearty meal. 

  • 2 cups water
  • 1 cup bulgur
  • 1 tbsp olive oil
  • 1 bell pepper
  • 1 tsp curry powder
  • 1 garlic clove, minced 
  • 15 ounces garbanzo beans (drained and rinsed)
  • 1/2 cup apricot, chopped 
  • 1/2 cup stock 
  • 2 Tbsp fresh parsley, chopped 
  • S&P TT

Heat water to boiling and stir in bulgur. Bring to boil then reduce to simmer (12-15 minutes) until water is absorbed. Fluff with fork. 

Meanwhile, heat oil in pan. Cook pepper. Stir in curry powder and garlic.  

The add beans, apricots, and stock. Heat to boil.  Remove from heat stir in bulgur and parsley. 

Makes 4 main-dish servings. Each serving has 13g protein.
