Broccoli & Cheese Quinoa

This is one of my favorite protein-packed dishes.  It’s fantastic as a main dish or a wonderful side dish too.  And super easy to make.

  • 1/2 cup quinoa 
  • 2 cups stock (or water)
  • 4 oz. broccoli (about 1 bunch)
  • 5 oz. Greek yogurt
  • 1 cup pepper jack cheese
  • 2 cloves of garlic 
  • Salt and pepper
  • Panko and olive oil


Preheat oven to 375°. 

In a 2 qt. Le Creuset or oven-safe pot, cook quinoa in stock according to package directions but double the amount of liquid.  

Five minutes before quinoa is done, add broccoli.

Drain quinoa and broccoli, then return to pot. Add yogurt, 3/4 of the cheese, salt, pepper, and garlic. Mix well, then top with remaining cheese. Mix panko with oil and sprinkle on top. 

Bake at 375° until cheese is melted and panic is golden.
